The show dates have changed to the 21st-22nd only.

A quite extraordinary line up has been released. It's all military this year, and no beach show. I hope to attend this one.

POLAND
Biało-Czerwone Iskry - x5 TS-11 (FP/S)
Biało-Czerwone Iskry - x2 TS-11 (F/S)
W-3RM Anakonda (F/S)
SH-2G Kaman (F/S)
Su-22 Fitter (S)
MiG-29 (S)
Antonov An-28 (S)
Mil Mi-14 (S)

CZECH REPUBLIC
Mil Mi-171 (F/S)
Mil Mi-24 (F/S)
W-3A Sokol (F/S)

UNITED KINGDOM
Red Arrows - x9 Hawk (F)

FRANCE
Rafale C (F/S)

TURKEY
SoloTurk F-16C (F/S)

SWEDEN
JAS-39C Gripen (F/S)

GERMANY
Eurofighter EF2000 (S)
P-3C Orion (S)

I would guess there is more to come, particularly as the Saudi Hawks are featuring very strongly on their promotional material.

Flying display addition:

Lim2 and SB Lim2

Worth noting that this duo has been cancelled last-minute or reduced to a singleton at every airshow they've been due to fly at so far due to paperwork problems, but hopefully this announcement suggests they're confident in resolving those problems over the next 7 weeks.

Yet more Iskras for the flying display - this time, the duo display debut from Fundacja Bialo-Czerwone Skrzydla.

In other news, the announcement of the Saudi Hawks' participation in the Kecskemet Airshow the week after Gdynia, and continued use of Saudi Hawks images in Gdynia's promotional material, makes the Saudi Hawks' participation in Gdynia 2021 look overwhelmingly likely. Combined with the Red Arrows and Midnight Hawks, it will be the first time that three Hawk-operating national aerobatic teams have appeared at the same airshow.

The Finnish Air Force Hawk solo has been confirmed as the special-scheme jet and the Saudi Hawks' participation now seems almost certain after news of their confirmation by Kecskemet one week later.

New additions:

CIVILIAN
3AT3 - x3 Aero AT-3 (F)
Luke Czepiela - Edge 540 (F)
Antonov An-2 (F/S)
Wojtek Bogdal - paramotor (F)

Flying display now adds up to approximately five hours by reckoning, with up to two hours still to fill.

According to Aviation Photocrew, discussions are indeed underway with the Royal Saudi Air Force, with the intention of bringing the Saudi Hawks for the flying display and other aircraft, "like the Typhoon and F-15", for static display. They also refer to a "once in a lifetime chance to catch a special Hawk formation in the sky", referring to the fact it will be the first show ever to host three BAE Hawk aerobatic teams and perhaps suggesting there will be a special formation sortie with all three teams flying together.

Also "likely to be confirmed in the next weeks" is the Ukrainian Air Force with a Su-27, Su-24 and An-26, although it's not specified which of these assets will take part in the flying display and which will be static only.
